Caring for your oysters
Proper care and storage are essential to preserve the freshness, flavor, and safety of oysters. Follow these guidelines to ensure optimal conservation from refrigeration to long-term freezing.

Oysters should be kept cold (frozen or refrigerated) at a temperature between 35°F and 41°F(1.7°C to 5°C) for up to 8 days.

If you do not plan to consume the oysters within 8 days, freeze them with the shells closed at -0.4°F (-18°C). You can store them under these conditions for up to 6 months.

To defrost, place the oysters in a container and refrigerate until the shells open naturally, indicating they are ready for use.

When storing oysters in ice, ensure that excess water is drained from the container to prevent deterioration.

Immediate Consumption
Pick the desired number of oysters and leave them at room temperature. They will begin to open within approximately 15–20 minutes and will then be ready for consumption. Once opened, oysters should be refrigerated and consumed within 2 days.
Refrigerator Defrosting
If oysters are to be consumed more than 2 hours after defrosting, they should be kept refrigerated.
After thawing, oysters typically open within 40–50 minutes and are then ready for consumption.
